If a man hits a woman and says it was a one time occurrence and would never happen again, should I believe him? What do statistics say?

The statistics say that he will hit again. The abuser always means he will not do it again in the monment, but can not deliever without outside help. Violence is a symptom of a deeper problems. I strongly recommend both of you get help immediately. Domestic violence is against the law. If you need immediate help call 911.
I suggest you call you local Domestic violence victim advocacy program. Most of them have hotlines that are free and confidential and will help you asesses the amount of danger you are in. Do not take this one time event lightly. This is serious and you need to know what action to take and what supports you have.
